Egg White Omelette with Spinach and Marinara

For a high protein, fast and tasty breakfast, you can scramble this up and have it ready to go in 10 minutes. As fast as you can pour cereal and milk in a bowl, you can have yourself a healthy meal that actually feels like a meal instead of kids food. You can add 1 or 2 egg yolks for a little extra richness without sacrificing a lot of nutrition if you’d like, it will also make this a brighter color. Use your favorite marinara sauce and any cheese you choose. Use full or low fat cheese for flavor, the totally fat free varieties tend to be rubbery and flavorless, and a little goes a long way, so use the best you’ve got.

Did you know: Frozen chopped spinach is a great alternative to fresh if you hate throwing food away after it’s gone bad. Squeeze the water out and you’re ready to go. Spinach, while very nutritious, is known for being really high in iron, but this is actually a myth. Doesn’t mean you should stop eating it, just don’t rely on this as a high source of iron.

Ingredients:
4 egg whites
1/2 cup frozen chopped spinach
1 oz cheese of your choice
1/2 cup marinara sauce

Directions:
Scramble your egg whites in an omelet pan, add your spinach and cheese. Cook until egg whites are cooked through. Top with marinara sauce and serve.
