Easy Sugarfree Apple Pie

Ingredients:
12 oz. can apple juice, concentrate
3 1/2 T. cornstarch
pinch. salt
2 t. cinnamon

9 inch unbaked pie shell
5 sweet apples, sliced

Mix all and bring to a rolling light boil.
When it starts to thicken take it from heat.
Pour into pie crust. Bake at 350-375 degrees or until golden brown.

Apple Sauce Cake

1 c. raisins
2 c. water
3/4 c. oil
4 T. sucanat
2 eggs
2 c. whole wheat flour
1 t. baking soda
2 t. cinnamon
1/2 tsp. nutmeg
1/4 t. salt
1/2 c. nuts (if desired)
1 c. applesauce, unsweetened

Procedure:
Sift all dry ingredients together and set aside.
In a separate bowl mix all wet ingredients.
Mix wet and dry ingredients together and mix well, then fold in applesauce, nuts and raisins.
Pour in a greased and floured cake pan unless using a non-stick pan.
Bake at 350 degrees for 25 –30 minutes or until cake springs back when lightly touched in the middle.

Magical Apple Diabetic Desert

 2 apples, pared, cored and roughly chopped
2 t. cinnamon
1/4 t. stevia
2 T. gelatine, unflavoured
1 1/2 cup lemon-flavoured naturally sweetened sugar free soda
Set the oven to 350 degrees. In a narrow, oblong deep pan arrange apples in layers. Mix 1 cinnamon with 1/8 t. stevia.
Sprinkle the mixture over each layer of apples.
Sprinkle gelatine over 10 ounces soda and leave until softened.
Stir remaining stevia and cinnamon until dissolved.
Sprinkle over apples; pour remaining soda to cover.
Bake for 1 hour at 350 degrees until cooked thoroughly cooked.
Refrigerate right away while still hot and wait 5 hours.

 Diabetic Orange Mock Biscuits

1 1/2 c. whole wheat flour
1 t. baking powder
pinch salt
1/2 c. low cal butter
1/2 c. raisins
1 egg
3 T. orange juice
2 t. orange rind, grated
1/8 t. stevia

Mix baking powder, flour and salt. Cut in butter until crumbly.
Add eggs, raisins, eggs, juice, rind and stevia.
Mix well. Make into balls. Flatten on cookie sheet.
Bake 12 to 15 minutes at 375 degrees.

Scrumptious Apple Turnover Recipe

2 apples, cored, peeled and sliced
3 t. lemon juice
2 T. water
2 slices whole wheat bread
1 t. cinnamon
Stevia to equal about 3 t. sugar

Cook stevia, water, cinnamon, and lemon juice with apple.
Cook until nice and tender. Cool. With the crust removed from the bread, roll thin.
Place mixture on 1/2 bread. Fold both slices diagonally.
After moistening the edges, press together with fork.
Bake at 425 degrees slower until crisp.
