Healthy Banana Bread and Nut Squares Recipes - Everyone's Favorite!

Be  sure you have your  printer cartridges  and ink ready to print these healthy recipes.

  

The dry ingredients are;

1 ¾ cups of whole wheat flour.
1 teaspoon baking powder.
1 teaspoon baking soda.
2 teaspoons pumpkin pie spice.
Add nuts and raisins to your taste.

Pour in the wet ingredients which are;

3 small or 2 large ripe bananas.
1) 6 ounce can of orange concentrated orange juice.

Mix thoroughly.
Stir well and pour the mix into a greased and floured loaf pan.
Your nose will tell you when it is done and you can check this if a knife comes out of the center of the bread clean.

Banana Nut Squares For Diabetics

Ingredients:
2/3 cup. butter
1/2 tsp. stevia
2 eggs, separated (stiffly beat whites)
1 cup.bananas, mashed
1 1/2 cups flour
1/4 t. baking powder
1 t. baking soda
1/4 t. salt
1/4 cup light sour cream
1 t. vanilla
1/2 cup chopped nutsProcedure:
Cream stevia and butter and add the yolks.  Mix well.  Add the bananas, vanilla and sour cream.
Mix the dry ingredients and add  alternately with the butter mixture. Mix until  blended. Add nuts and stiffly beaten egg whites. Pour into two 8×8 inch square pans.
Doesn’t rise like regular bars.

Chewy Chocolate Squares with Dried Fruit and Nuts

This is highly customizable recipe in that you can use any combination of fruit and nuts that you have on hand (be sure to use the dates though, as they lend to the sweetness). These pair really nicely with wine and make nice laid back treat for a tasting or other party where you want to have something complimentary but unusually tasty. These also make for a nice snack if you want something sweet but don’t want a rich dessert. Keep these in an airtight container and they’ll last for a week.

Did you know: Dried fruit is made by removing the water from the fruit and concentrates the flavor and sugar of the fruit. This can either be done by using a dehydrator or with the sun. It’s still a healthy snack, just be sure that there is no added sugar, otherwise it becomes more like eating candy.

Ingredients:

1/2 cup shelled toasted pistachios, chopped
8 dates, pitted and coarsely chopped
1/2 cup slivered almonds, toasted
1/2 cup eacg chopped dried apricots, dried figs and dried raisins or cherries
1/4 cup enriched flour
1/4 cup whole-wheat breadcrumbs, fine
2 T. cocoa powder
1 t. ground cinnamon
1 t. grated orange zest, dried
1/2 t. nutmeg
1/4 t. Allspice
1/8 t. Salt
3/4 cup agave nectar
3/4 cup fructose
2 T. vegetable oil

Directions:

Preheat oven to 300°F. Line a 9-in. Pan with parchment paper. Spray with cooking oil.

Combine all the ingredients except the agave and fructose.

Bring agave nectar and fructose to a boil in saucepan. Reduce heat and simmer 10 minutes. Stir the agave mixture and oil into nut-and-fruit mixture.

Transfer to pan and bake 50 minutes or until mixture is done on sides but still soft in the middle. It will firm up once it cools. After it cools, cover with foil and let rest overnight. Unmold, remove parchment, and cut into squares.
