Broiled Tomatoes with Cream

Serves two for lunch or 4 as an appetizer. You can definitely make these without cream.

Broiled Tomatoes with Cream Ingredients

8 medium tomatoes (not giant beefsteak or tiny cherry tomatoes)
2 Tb. extra virgin olive oil
kosher salt
pepper
1/2 ts. demagara
fresh herbs like thyme and chives
2 Tb. cream

Broiled Tomatoes with Cream Preparation

Halve the tomatoes and put them in a baking dish cut side up. Drizzle with olive oil, then sprinkle salt, pepper, demagara, and thyme. Broil on high for 3 minutes. Remove from oven, dribble a little cream over each tomato, and scatter sliced chives. Broil for one or two minutes more, until bubbling but not burnt.
