Chicken Satay with Spicy Peanut Dipping Sauce Ingredients:
2 teaspoons coriander seeds (toasted and ground)
2 teaspoons cumin seeds (toasted and ground)
1 teaspoon turmeric (ground)
2 stalks lemongrass (peeled & chopped)
2 cloves garlic (grated)
1 tablespoon galangal (or ginger, grated)
1 lime (juice and zest)
2 tablespoons fish sauce
2 tablespoons palm sugar (grated or brown sugar)
1 pound chicken (cut into thin strips)
* wooden skewers (soaked in cold water for 30 minutes)
1/4 cup peanut sauce
Chicken Satay with Spicy Peanut Dipping Sauce Preparation:
1. Mix the coriander, cumin, turmeric, lemongrass, garlic, galangal, lime, fish sauce and sugar in a food processor.
2. Marinate the chicken in the marinade for up to 4 hours.
3. Skewer the chicken and grill it for about 5 minutes on each side.
4. Serve with peanut dipping sauce.
