Grilled Panini with Apples and Cheddar

Everyone loves a grilled cheese. It’s easy and tasty, kids love it, so why wouldn’t we? It doesn’t have to be the standard Wonder bread with American cheese though. It doesn’t even have to be limited to bread and cheese such as this recipe. I always say that the fewer ingredients in a recipe, the better they should be. So while a standard grilled cheese is okay in pinch, I generally go for good whole grain or sourdough breads and the best cheese I can get my hands on.

Did you know: While a bit odd to some people, fruit and cheese go really well together, such as the apple and cheddar in this sandwich. Some common pairings include pears and blue cheese, grapes and gouda or brie with cherries or berries. Any of these would also make a good sandwich so try some. Chances are if you like the fruit with the cheese, it could only be better on some hot buttered bread!

Ingredients:

8 slices whole grain bread
1/2 cup low-fat honey mustard
2 apples, sliced thin
8 ounces low-fat Cheddar cheese, sliced thin

Directions:

Preheat a panini press on medium heat. If you don’t have a panini press, you can use a non-stick skillet or a George Foreman grill.
Lightly spread honey mustard evenly over each slice of bread. Layer apple slices and cheese over 4 slices of bread, using about 1/2 apple and 2 ounces of cheese for each sandwich. Top each with remaining bread slices.
Lightly coat panini press with cooking spray. Grill each sandwich for 3 to 5 minutes or until cheese has melted and bread has toasted.
Remove from pan and allow to cool slightly before serving.
