Did you know: Olive oil is all over the place in terms of the way it’s made, as well as the cost and flavor. Just as there are many varieties of olives, there are as many types of olive oil. Extra virgin is considered the best and if you’re using it to drizzle over a salad or in a dressing, that’s what you should choose. Don’t think that the most expensive ones are necessarily the best; they range in flavor from fruity to peppery so it’s actually a personal preference. Ingredients:
2 whole-wheat tortillas or pita breads
2 cups baby spinach
1 cup sliced roasted red peppers
4 kalamata olives, pitted and sliced
1/2 cup sliced red onion
1/2 cup chopped cucumbers
1/2 cup chopped tomatoes
1/2 cup crumbled feta cheese
Olive oil and red wine vinegar for drizzling
Directions:
Divide the veggies equally among each tortilla, drizzle with olive oil and vinegar an fold over to serve.
