Pineapples, also called Ananas and Pina, are native to Paraguay and Brazil . They were found by Columbus and introduced to Europe and then to Asia. Pineapples are not native to Hawaii but were introduced by the Spanish in the 1500’s. When pineapples were introduced to Europe, they were considered to be the fruit of royalty.
Field ripened pineapple has a much different taste and character from the supermarket fresh pineapple that we know. It is much sweeter and is more mellow that the commercial product.
Dole.com recommends that you select pineapples that are fresh looking and to avoid fruit that is old looking, dry or with brown leaves. Avoid bruised fruit or those with soft spots.
Some commercial use of pineapple is inhibited by the presence of bromolain, which is a powerful protolytic enzyme. In fact, I can eat only small amounts of fresh pineapple because the bromolain actually starts to digest my tongue, making it bleed.
