Raspberries and peaches are some of the best summer has to offer. Luckily they are harvested at peak times and frozen immediately so you get maximum freshness out of them. Use either frozen peaches or frozen raspberries here, otherwise you’ll overwork the motor on your blender and end up with something closer to sorbet than a drink (not that that’s a bad thing by any means!). Do this too often and you’ll end up buying a new blender sooner rather than later. If you are lucky enough to have both fresh raspberries and peaches, by all means use them; just add a cup or so of ice to get that cold smooth texture. Use whole milk and full fat yogurt to get that creamy texture often associated with peaches and cream, although low fat versions will definitely work if you are watching fat intake or that’s just all you have in the house. You don’t have to peel your peaches; you can just take out the pits, slice or rough chop and add them to your blender. You’ll get much more fiber and nutrients this way, and you’ll never even know the difference. Just make sure your peaches are ripe or even a bit overripe. Canned peaches also work well here although I might leave out the honey, as they tend to be packed in syrup that’s pretty sweet. I would only use canned as a last resort.
Did you know: If you split open a peach pit, you’ll see what looks like an almond. It’s actually what they call a bitter almond and contains cyanide, a common poison you may have heard of. You can, in fact eat these and if you search you’ll even find recipes, as there isn’t enough cyanide in one to make you sick, but if you decide to eat them, I personally would proceed with caution. You’ll find this in apricot kernels and apple seeds as well. I have never eaten them, but I’ve read that they are really bitter, hence the name.
Ingredients:
1 cup whole milk
1 cup raspberries, fresh or frozen
2 peaches, sliced with skin on, or 1 cup frozen sliced peaches
1/2 cup plain full fat yogurt
1 tbsp honey
Directions:
Add milk and other ingredients to your blender and blend away. Serve immediately for a cold and creamy refreshment you can’t wait to try again.
