Ingredients:
1/2 c. white flour
1 c. whole wheat flour
1/3 c. cocoa powder
1/8 t. stevia
1 t. baking soda
1/2 t. salt
1 c. water
1 T. white vinegar
1/4 c. light oil
1 egg
1 t. vanilla extract
Mix all wet ingredients and mix with dry ingredients.
Pour in a floured greased cake pan.
Bake at 350 degrees for 25 –30 minutes.

Chocolate Sauce
You can pour this sauce over the chocolate cake.
1 T. butter
3 T. cocoa powder
1 1/2 T. cornstarch
1 c. 2% milk
1/8 t. stevia
1/8 tsp. salt
Melt butter and blend with cocoa, salt and cornstarch until smooth. Add milk and stevia and
cook over medium heat, stirring constantly until lightly thickened, remove
from heat. Stir in vanilla. Stir until cold in a pan of ice water.
Sauce thickens as it cools.

Diabetic Parfait Tiramisu
These days, you can find easy diabetic recipes nearly everywhere on the web. However, many focus on core meals as opposed to desserts.
A favorite dish, tiramisu, is often a big “no” for diabetics due to its high fat and sugar content. However, there is a great recipe for diabetic parfait tiramisu that is nearly as decadent and the original. The recipe calls for nothing additional besides 8 parfait glasses, yet is a great way to add original spin to a classic dessert option.
Ingredients:
2 3.5 oz packages of sugar-free instant vanilla pudding mix
2 cups of skim milk
8 oz of light cream cheese, softened
1 package of ladyfingers
½ cup hot water
2 cups light whipped topping
1 tbsp of coffee
1/2 tsp of unsweetened cocoa
Directions
Mix hot water with coffee, putting 1 tbsp of the mixture aside.
Take half of lady fingers and cut them into quarters. Line each parfait glass with the lady fingers and then drizzle with reserve.
Combine the vanilla pudding mix and milk. Once it has thickened, add in all the coffee mixture with the exception of the 1 tbsp reserve. Combine softened cream cheese with the mixture.
Once smooth, evenly spoon the pudding mixture into the 8 parfait glasses over the lady fingers.
After evenly distributing the mixture into the parfait glasses, top the desserts with whipped topping and sprinkle with cocoa.
Refrigerate for two to four hours.
